Betty's Fudge: Too Good For Mediorce Ingredients

Betty Ice SkatingThe thought is simple: fresh butter and milk, local honey and herbs, organic sugar, and rich, fair-trade chocolate make for a delicious and smart treat. We're not saying eating Betty's fudge will solve social problems, but it will promote local organic farming, fair wages for cacao producers and environmentally responsible sugar farming. That's pretty good from just a couple boxes of fudge.

Chocolate

The chocolate used is from central american cacao bean farmers. After some confusing and exhausting research (including reading as well as tasting) we've decided African cacao is produced in unstable countries with labor that is exploitive at best (and slave labor at its worst).

The chocolate, depending on the variation, ranges from 58% to 74% cacao. It's dark, flavorful and healthy. Yes, healthy. More and more studies are finding that the wonderful Theobroma cacao has benefits within a moderate diet. Cacao is full of antioxidants which help protect the body from LDL (low-density lipoprotein) oxidation in cholesterol. It's a major source of copper in our diet. And chocolate, like red wine, contains polyphenols which aid in lower blood pressure. All this is meant to say what Betty's mother always said, "All good things in moderation."

Butter, Cream and Goat's Milk

We are happy to use butter and cream from local dairy farmers. It's true that happy cows produce the best and that goes for goats too. The butter that goes into the fudge is a beautiful golden yellow. The cream is often so thick it does not pour. There are no chemicals or hormones.

Honey

Local and raw, this honey has a strong flavor that is slightly floral, but more grassy in taste. We use it as the base to our fudge sauces.

Other Creations

We love experimenting. Visiting us at the many farmer's markets we attend, you will see new things all of the time! Our newest work is Cajeta. Cajeta is a slow-cooked caramel that is Mexican in origin and made with goats milk. Many of our customers have been happy with this using it over ice cream, dipping cookies in it or mixing it in the morning coffee!
